Using Aronia Berries to Enhance Health

Super-Antioxidant Aronia Smoothie
Ingredients:
- 1 cup milk
- 1 cup Aronia Berries
- 1 frozen banana
- 1 cup plain yogurt
- 1 cup raspberries, strawberries, or other favorite fruits

Aronia Berry Muffins
Ingredients:
- 2 cups all-purpose flour
- 1/2 – 3/4 cup granulated sugar
- 1 Tblsp baking powder
- 1/2 tsp salt
- 1 cup Aronia berries (may crush/chop if desired)
- 2 large eggs
- 1/2 cup milk
- 1/2 cup butter (melted)
- 1 tsp vanilla
Directions:
- Preheat oven to 375 F and line your muffin tine with paper liners
- Mix together eggs, milk, butter, and vanilla
- Slowly stir in flour, sugar, baking power and salt
- Then add Aronia berries to your mixture
- Spoon your batter into the muffin cups, each cup about 3/4 full
- Bake for 20-25 minutes
Aronia Berry Scones
Ingredients:
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 5 tablespoons butter, cold & cut into pieces
- 1 cup Aronia berries
- 1 cup heavy cream
- 2 cups confectioner’s sugar
- 1-2 tablespoons lemon juice
Directions:
- Preheat oven to 400 degrees
- Sift together flour, baking powder, sugar and salt. Using two forks or a pastry knife, cut butter into the flour mixture until it creates coarse crumbs.
- Add the Aronia berries and distribute them evenly. Make a well in the center of the mixture and add the cream. Gently fold everything together. (don’t overwork the dough or crush the berries) Just moisten the flour mixture so it holds together.
- Turn the dough onto a lightly floured surface. Press dough into a circle, it will be rough and barely holding together. Use a knife to cut the dough into 8 wedges.
- Transfer to a parchment lined baking sheet and bake for 15-20 minutes, until lightly browned around the edges. Let cool a bit before adding glaze.
- Glaze: sift confectioners sugar into a bowl and slowly add lemon juice until you get the consistency that you can drizzle over scones. Let the glaze dry before serving.
Blueberry Aronia Berry Cobbler
Ingredients:
- 1 1/2 Sticks of butter, divided
- 1 1/2 cups sugar (plus more to sprinkle on top)
- 1 1/2 cups blueberries
- 1 1/2 cups aronia berries
- 1 teaspoon grated lemon zest
- 1 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups whole milk or buttermilk
Directions:
- Preheat oven to 350 degrees
- Place 4 tablespoons butter in 9 x 13 baking dish. Place in oven and let butter melt, watching carefully
- Stir together blueberries, aronia berries, 1/4 cup of sugar and lemon zest
- In another bowl, stir together flour, baking powder, 1 1/4 cups of sugar and salt. In a microwave-safe bowl, melt remaining 8 tablespoons of butter. Whisk in melted butter and milk. Stir until smooth.
- Remove baking dish from oven and pour batter into the pan
- Gently spread berry mixture evenly over batter and sprinkle with sugar
- Bake 42 – 48 minutes, until golden brown and edges are crisp.
